
Peanut Hemp Energy Balls
Another 11g of plant protein incoming in the form of these little beauties!
Prep: 5 minutes | Cook: 10 minutess | Ready: 20 minutes | Serve: 12
Ingredients:
60g medjool dates ( approx 3 dates )
2 tbspn boiling water
70g unsweetened peanut butter
12g cacao powder
12g cacao powder
25g Hemp hearts
5ml maple syrup ( approx 1 tsp )
50g rolled oats
10g peanuts
Method:
1. Pit the dates & place in a bowl. cover with the boiling water. set aside for 5 minutes
2. After 5 minutes add the soaked dates & any remaining water to a food processor. blitz until smooth
3. Add the peanut butter, maple, oats, chia seeds, hemp seeds, peanuts & cacao powder to the food processor
4. Pulse until all combined & the peanuts have broken down
5. Divide the mix into 12 & roll into balls
6. Store in an airtight container & in the fridge if it’s a bit warm in your kitchen
